Anyone who knows me well, knows I don’t cook… I bake (my grandfather was a baker, that’s what’s in my blood). In our house if I made taco meat, the family is gracious and excited. This year as I’m playing “Stay At Home Mom,” I’m trying to make at least one family meal a week. That’s about all I can handle.
This meal is my go-to dinner. It’s about the only dinner I’ve been making steady the duration of my marriage. Actually, when we were married on an Alaskan cruise, we also did a Newlywed contest on the ship. When my husband was asked what his favorite meal was, it was this chicken. Of course when they brought me back on stage I guessed the same dish, because it was the only dish.
I’m getting better at expanding my dinner recipes, but this is still the easiest dish. I love it because it seems to please everyone’s palate, and it’s easy to make. It also serves great as leftovers, even slicing it up for chicken salads. When I make it, my husband and I are set on dinner for the rest of the week.
