This weekend we spent some time getting into the fall spirit. We took the little berries to the pumpkin farm. Tyler was able to pet the animals and had more interest playing with the trucks than finding a pumpkin.
All that fall spirit had me in the mood to bake something pumpkin related. I’m sad to admit I’ve only had one pumpkin spice latte all season and it feels almost over. So this afternoon I decided I deserve a little pumpkin in my life.
I got my inspiration from DearCrissy’s recipe. I was a bit nervous when I completed the batter because it didn’t seem like cookie recipe consistency. But I cooked it anyways and the result was a light and fluffy pumpkin cookie.
I didn’t care for the frosting recipe on there(too much prep work), so I used a vanilla buttercream recipe from Wine and Glue.
The result was a yummy and delicious pumpkin cookie! The frosting seems to melt in your mouth and the cookie is the perfect pumpkin taste! Give it a try and let me know what you think!
