Brownies with a Twist!

brownie plateIt’s no secret I love to bake. This week I found myself baking up some brownies for a neighbor who is retiring/getting knee surgery. It’s always great when I can bake a treat and then send it off somewhere for others to enjoy. A plate for the neighbor and the rest of my husband’s workmates to enjoy!

Normally I’m all about baking from scratch, but today I wanted to get it done quickly. Here are two recipes I use to jazz up the typical brownie box mix.

 

brownieMocha Banana Brownies

Brownies

Ingredients: 

Brownie Mix (water, oil, and egg)

1/2 cup mashed banana

1/2 cup semi-sweet chocolate chips

Directions:

  • Follow the normal directions on the back of the brownie mix.
  • Add one mashed up banana (1/2 cup) to the batter while mixing.
  • After the batter is mixed, add 1/2 cup semi-sweet chocolate chips.
  • Bake as normal

Frosting:

Ingredients:

3 T unsweetened cocoa

1 t instant coffee granules

1/3 cup butter, softened

4 cups powdered sugar

1 t vanilla

1/2 t salt

5 to 6 teaspoons of milk

Directions:

  1. In a large bowl, beat the cocoa, butter, and coffee until it’s light and fluffy.
  2. Add the remaining ingredients, adding milk and powdered sugar slowly until you reach the desired consistency (I like my frosting with only about 3 cups of sugar).
  • Frost the brownies, cut, and serve!

 

My other favorite brownie recipe is for Grasshopper brownies. I’ve been making these since I was a kid and are always a go-to recipe to bring to a BBQ or event.

Brownies

Ingredients: 

Brownie Mix (water, oil, and egg)

Directions:

  • Follow the normal directions on the back of the brownie mix and bake as normal

 

 

Frosting:

Ingredients:

3 oz cream cheese, softened

1/4 cup butter, softened

4 cups powdered sugar

1 t vanilla

1/4 t peppermint extract

3 to 4 teaspoons of milk

4 to 6 drops of green food coloring

Directions:

  1. In a large bowl, beat all the ingredients together, adding milk and powdered sugar slowly until you reach the desired consistency (I like my frosting with only about 3 cups of sugar).
  • Frost the brownies, cut, and serve!
  • Sometimes I also melt some chocolate chips and drizzle them over the top!
